It's the last week of October and still in the 70s! Even though this is one reason why I love Richmond, the warm weather has been messing with my fall favorites in the food and clothing departments.

But I couldn't wait to make some cold weather favorites anymore so yesterday I decided to cook up a batch of my mother-in-law's Hot Potato Soup. Well... this recipe was adapted from my mother-in-law's recipe in all its southern comfort cooking glory.

✔1 lb Ground Turkey soup ingredients ✔15 oz Cannelloni Beans (drained and rinsed) ✔1 Small Onion ✔4 c Potato ✔24 oz Tomato Sauce ✔4 c Water ✔ Salt, Pepper, Garlic Powder, Chili Powder, Cayenne Pepper

Brown the ground turkey. Chop the onion. Dice the potatoes. Combine all ingredients. Add salt, pepper, garlic powder, chili powder, cayenne pepper to taste and if that's not enough heat for your taste buds load up on some sriracha. ???

Bring to a boil then reduce to a simmer for approx. 5 hours or until potatoes are soft.

I used russet potatoes because I had a bunch in the house that were about to go bad, but if you wanted to make this dish even healthier you could replace them with sweet potatoes.
